會知道這家店,要從丁男友高中畢業說起。那時候丁男友的表哥帶著他來台北逛展,中餐便被表哥拖進這家牛肉麵店,表哥說:如果台北的牛肉麵,論白湯的話,我一定挑史記牛肉麵。丁男友研究所時,表哥又找他去吃牛肉麵,但表哥似乎忘記自己帶他去過這家,又不知不覺把丁男友拖入這家店。莫非這家牛肉麵有什魔力?可以讓他表哥(一個大饕客),一而再,再而三的造訪。
Mr.Ding's cousin introduced this restaurant to him back in the days when he just graduated from high school. His cousin is what we called, a foodie. And this beef noodle restaurant is his top choice when it comes to stewed beef noodle soup. After that, Mr. Ding's cousin took him to the beef noodle restaurant again when he was in graduate school. What kind of magic does this restaurant have that makes a foodie go and go and go again tasting that soup for so many times. I decided to find it out myself.
店內裝設木製桌椅,還有一些匾額,顯得很中華風。環境整潔,店員主動提供籃子給我們擺背包,用餐環境算是寬敞舒適。我們點了清燉牛肉麵半筋半肉一碗,紅燒牛肉麵一碗,和三盤小菜:紅油抄手、燙豆干、涼拌小黃瓜。
The tables and chairs are made of wood. The ancient Chinese words are written on plaques. The whole decoration in the restaurant is very ancient Chinese style. The staff offered us a basket so we can put our belongings in there which was a very sweet gesture. We ordered one stewed half tendon half meat beef noodle soup, one braised beef noodle soup, and three side dishes: pork wontons with spicy sauce, dried tofu, and cucumber with spicy sauce.
白湯的部分,我個人一開始喝不多,因為白湯一上來丁男友就把它整碗搶去了。開始喝覺得不錯,甘甘甜甜的,微微的牛肉味,但沒有紅燒湯頭這麼濃郁,味道有點類似味道比較淡的豚骨拉麵湯或者更貼切的說是韓國的雪濃湯,算是比較有特色的湯頭。這看似濃郁的湯實際上非常清爽,如果是豬骨湯頭喝完後嘴唇應該會黏黏的,但這白湯喝起來不膩且好入口、不黏唇。牛肉部分切的非常薄,入口不太費盡咬一下就沒了,牛筋也是滑嫩入口即化,肉的部分算是很出色。
I didn't have much stewed soup at first since Mr. Ding was too busy digging in that he forgot to share some with me. When I could finally taste some, I found out that the stewed soup was quite nice, filling with a little scent of beef and also a little bit of sweetness. It was not as rich and heavy as the braised beef noodle soup. The stewed soup tasted more like Japanese Tonkotsu Ramen or Korean Seolleongtang. It's special and rare for beef noodles soup. Surprisingly, the soup makes me want to have more and more. It's not greasy at all. As for the beef, it melted as soon as it touched my tongue, and so is the tendon. The overall reflection was good.
紅燒牛肉麵則味道濃郁,牛肉味非常明顯,湯喝起來帶有椒麻的香氣,稍微辣辣的,對冬天來說是錦上添花的存在,有種喝麻辣鍋的湯的感覺,丁哥姐姐一開始是比較偏好紅燒湯頭的。肉的部分,是牛肉塊,肉煮的很軟嫩,筷子一夾肉就快散了所以非常容易咀嚼,且入味。
The braised beef noodle soup is rich with beef and spicy flavors. The spice comes from the pepper instead of chili, and kind of feel like I was having spicy hotpot. I love it at the beginning giving that it's really suitable for a winter day. It makes you warm at once. As for the beef, compared to the one in stewed soup, the one in braised soup was cut into chunks. It was tender so it's effortless when biting. The beef is rich with the flavor of the braised soup. A very nice choice if you like spicy and heavy flavors.
小菜點了豆干,辣小黃瓜和紅油抄手。豆干和小黃瓜都醃漬得入味,雖然價格上稍稍貴。只是小菜本身偏辣,丁男友又再每道小菜上面灑了辣渣,丁哥姐姐吃到最後直接棄守小菜,但丁男友到是吃的很香,還說辣油很香,一定要加。我猜他有獨自佔領小菜的陰謀。紅油抄手很有味道,他的酸味來自配菜的酸菜,不是醋本身,丁男友說這道辣的很香,他說現在看到照片嘴巴口水還是直流,但我吃兩顆就放棄了,嘴巴整個紅起來。但吃這家牛肉麵,點小菜還是很必要的,其實小菜做的都很夠味,只是辣油不要加太多。
Three side dishes: pork wontons with spicy sauce, dried tofu, and cucumber with spicy sauce
The dried tofu and the cucumber had not only kept the original flavor but also added the taste of sauce. We could tell they've been pickled before cooking. These two side dishes were spicy enough, yet, Mr. Ding decided to add more chili on them. At the end, my mouth hurt and I couldn't taste anything except for the hot. I had to give up and let Mr. Ding took them all. I strongly believe he did it on purpose.
The pork wontons with spicy sauce were really delicious. There was a bit of sourness that came from the pickled mustard green, not the vinegar. Mr. Ding said this side dish has both spicy and the rich scent of spice itself. He loved it, and highly recommended it for those who like spicy food. Well, I like it, but I have to tell you, you got to be a spicy person to finish it all.
Side dishes seem necessary when we dine in the restaurant. We saw people in other tables all ordered side dishes. They all tasted wonderful. Just be careful with the chili sauce.
但在多喝幾口湯和多吃一點小菜之後,丁哥姐姐在牛肉麵的心境上出現了重要轉折!紅燒湯頭固然好喝,但跟其他牛肉麵其實拉不開差距,但清燉湯,在吃了許久後,漸漸會越吃越覺得甘甜,勝過紅燒湯頭,最後吃飽飽,我們兩個把白湯喝完了,紅燒還剩一些些。
On my half way enjoying the food, there was a twist in mind. The braised soup was delicious, yet, it seems similar to other beef noodle soup I had tasted before. As for the stewed soup, it was special and you would want it more at the first touch until the very last. I think I like the stewed soup better than the braised one in the end. Mr. Ding and I finish the whole stewed beef noodle soup while there was still some braised soup remaining.
這次用餐下來半筋半肉一碗麵270、紅燒牛肉麵240、小黃瓜60、豆干40、抄手70,總共吃了680。以牛肉麵來說確實偏貴,但偶爾來吃個特別的清燉半筋半肉麵再配個一兩道小菜還是很值得的,畢竟丁男友都來吃了三次了,大家有空也可以來光顧看看,尤其愛吃辣小菜的朋友,這邊的小菜真的很適合。
The price for stewed half tendon half meat beef noodle soup is NTD 270, braised beef noodle soup is NTD 240, pork wontons with spicy sauce is NTD 70, dried tofu is NTD 40, and cucumber with spicy sauce is NTD 60. Altogether, we paid NTD 680. The price is a little high for beef noodles but it's worth it coming here once in a while and taste that special stewed beef noodle soup. We highly recommend it. If you like spicy side dishes, then, this restaurant will be your choice.
